Breton Chicken & Mushroom Stroganoff

 

This recipe is one I found on a Year 8 school trip to France, and who ever said you never learn anything on them? When I asked how it was flavoured, the waitress asked the chef who said "Calvados et cidre!" As it happened when I made this dish, I was clean out of Calvados. Quell surprise! So I substituted brandy, which works really well. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients: Chicken breasts here, but skinned chicken thighs are more flavoursome, onions, a generous slug of brandy, 300ml dry cider, 200ml chicken stock, onions, a tablespoon of plain flour, sage (dried is good), salt and pepper to taste.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Flambe! Dice onions and bring to light colour in olive oil, add chicken and brown off. Chuck in the brandy a watch your eyebrows! Add cider, stock and seasoning and allow to reduce over low heat. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

To accompany the chicken, I made a mushroom stroganoff. Easy peasy! Chop mushrooms, onion, one clove of garlic, a squish of tomato puree, a sprinkle of dried tarragon, bay leaves, salt and pepper sizzled in olive oil. Chuck in a large tot of dry sherry and allow to reduce for ten mins. Finish wth about 200ml of cream and serve.
