ABC soup - Apple, Beetroot and Carrot
This is a tasty autumnal bowl of cheer (geddit?). With apples and carrots being cheap and plentiful and beetroots less than 80p in most supermarkets, this is an inexpensive and easy to make starter or supper with a big hunk of crunchy bread.
You need;
A large cooking apple, a handful of carrots and a pack of ready cooked beetroots. To balance the flavours, an onion, a stick of celery, a stock cube and salt and pepper to taste. A slug of cream stirred in at the end adds a proper lusciousness to the dish.
Chop all the ingredients into a large pan with a litre of water and bring to the boil. Reduce heat to a low simmer for at least 45 mins to an hour.

Serving suggestion, with a scoop of creme fraise or soured cream to offset the slight sweetness of the apple.
